There is nothing like something cold and frozen to help cool you off! And, with summer temperatures here in West Texas soaring into the 100F’s , what better to cool us off than a healthy frozen treat? The tanginess of lemon in the Lemon Frozen Yogurt not only gets your attention but refreshes as it nourishes. The yogurt I use is homemade and full of probiotics to benefit your intestinal bacteria.
Lemon Frozen Yogurt
Ingredients
- 3 c. yogurt (where to buy starter)
- 2 egg yolks
- 1/2 c. honey
- grated rind of 1 lemon
- juice of 2 lemons
Procedure
Blend all ingredients together in a blender for about 30 seconds – just to mix well.
Pour into an ice cream maker and mix according to the directions.
I used my daughter-in-law’s Cuisinart Pure Indulgence 2-Quart Automatic Frozen Yogurt, and Ice Cream Maker and it did a beautiful job making the frozen yogurt without salt or ice – it was done in only 20 min!
