I love green beans fresh from the garden. In fact, I like to eat them raw, right after picking and so do my children! Small, tender and crunchy is the way we like them. Besides, there is just a sense of satisfaction gained from growing your own food. You know the soil and what was put into it as fertilizer. You know if the garden has been sprayed with pesticides or bugs just squished – not my favorite job but for squash bugs it is the way to go! You know if herbicides were sprayed or the weeds hoed. While our garden has not produced the quantity of green beans that I had hoped for, we are definitely enjoying the ones we have. Normally, I freeze any extra green beans to have later in the year but, this year it looks as if we will use them all.
I use a 17-Inch Cast Iron Skilletto make the Garlicky Green Beans and cook them as if I were stir-frying. In the following recipe be sure not to cook the green beans too long – they are best when still slightly crisp! Oh, and feel free to add more garlic if you dare!
- 1½ lbs fresh green beans
- 4 Tbsp olive oil or butter
- 4 -6 large cloves garlic, minced
- salt to taste

- Heat butter or oil in a frying pan.
- Add the minced garlic and saute.
- Add green beans and stir-fry until just tender.
- Add additional butter/oil if needed.
- Salt to taste Serve hot and enjoy!
