I am getting ready to fly to Georgia where my sister is having surgery and will be gone for almost two weeks. So, I have been planning meals to freeze or ones that can be made with minimal preparation. This is one meal that can easily be made ahead – just cook it, allow to cool and freeze. When you are ready to eat it, allow the Crust-less Spinach Quiche to thaw, heat and enjoy. It doesn’t get much easier and I know John and the children will have a nutritious meal while I am gone!
