  1. Heat the cream to 86 F and turn off the heat.
  2. Add starter culture and mix thoroughly.
  3. Cover and allow to sit for 12 hours at room temperature.
  4. For a thicker consistency, line a colander with cheesecloth and place curds into colander. Allow to drain for several hours in the refrigerator until the desired consistency is reached.
  5. Store in the refrigerator in an air tight container.
  6. This will keep for about a month.
