  • 6 oz espresso
  • 1 Tbsp sugar
  • 3 Tbsp Amaretto
  • 2 Tbsp Cointreau
  • 2 c. marscapone (cream cheese may be used)
  • 2 egg yolks beaten
  • 1/4 c. sugar
  • 1/4 tsp sea salt
  • 1 Tbsp lemon peel
  • 2 egg whites
  • 6 oz lady fingers


  1. Mix together the espresso, 1 Tbsp honey, Amaretto and Cointreau - set aside and allow to cool completely.
  2. Mix the ricotta cheese, egg yolks, 3/4 c honey, salt and lemon juice together thoroughly.
  3. Beat egg whites until stiff.
  4. Fold the egg whites into the ricotta cheese mixture.

  5. In a deep dish, place a layer of lady fingers in the bottom. Spoon the coffee mixture over the lady fingers to saturate them. Cover with the marscapone or cream cheese mixture on top and continue layer ending with the cheese mixture.
  6. Refrigerate overnight.
  7. Enjoy!

I use sprouted flour or almond flour from my affiliate partners (where to buy sprouted flour) / (where to buy almond flour) for the homemade lady fingers. While they are not as light as the store bought version, they are more healthy.
