Ingredients

Ingredients:

  • 1 lb beef heart
  • 1 c. olive oil
  • 1 c. raw apple cider vinegar
  • 1/2 c. red wine optional
  • 2 tsp sea salt
  • 1/4 tsp cumin
  • 1 tsp pepper
  • 1 tsp paprika
  • 4 cloves garlic minced

Instructions

  1. Cut the heart into 1 inch cubes. I found this is easier to do with kitchen scissors.
  2. As you cut, remove any hard areas or vessels from the heart.
  3. Place the cubes in a bowl.
  4. Combine the rest of the ingredients and pour over the cubes.
  5. Marinade for 24 hours in the refrigerator.
  6. Place the cubes on skewers and grill for about 8 minutes. Turn the skewers until all sides are cooked.
  7. Enjoy!
