Italian Pasta Salad

Ingredients

  • 1 lb pasta tri-colored fusilli or rotini work well
  • 1 c sun-dried tomatoes
  • 1 bunch basil, fresh
  • 1 c green olives halved
  • 14 oz artichoke heart quarters drained
  • 1 c mozzarella cheese shredded
  • 3 Tbsp apple cider vinegar
  • 1/4 c olive oil
  • 1/4 tsp salt
  • 1/4 c mozzarella cheese opt. for garnish

Instructions

  1. Cook pasta according to package directions - Drain, rinse with cold water and place in a large bowl.

  2. Add to pasta bowl, sun-dried tomatoes, artichoke hearts, olives, cheese and basil.

  3. Combine together the vinegar, salt and olive oil. Mix well and add to pasta.

  4. Chill before serving. Garnish with additional cheese and basil.
