In a large freezer bag, place the pork rinds. Using a soft mallet, rolling pin or the bottom of a heavy cup, crush the pork rinds so they resemble bread crumbs. Season the pork chops with salt, pepper, and a dash of garlic powder.
Season the crumbs with salt, pepper, garlic and onion powder, and parsley. Mix well.
Dip the chops in egg, and then into the bag of crumbs. Do one pork chop at a time.
Place on a parchment lined baking sheet.
**Optional : Spray the tops of the pork chops with coconut cooking spray to help enhance browning.
Roast in the oven for 25 – 30 minutes or until the pork is cooked through.
Enjoy!
