Ingredients
For the Brownies

butter
melted

vanilla

coconut flour

almond flour

unsweetened cocoa powder

baking soda

monk fruit sweetener
erythritol may also be used

sugar free chocolate chips

chopped nuts
- pecans or walnuts - optional but delicious!
For the Topping

sugar free chocolate chips

coconut oil
Instructions
Preheat oven to 350 F.
Line a 8 x 8 pan with parchment paper.
In a small bowl or measuring cup whisk together the eggs and melted butter.
Using another bowl, combine coconut flour, almond flour, unsweetened cocoa powder, sweetener and baking soda.
Add the wet ingredients into the dry ingredients and mix well.
Stir in the chocolate chips and chopped nuts (if using).
Pour the batter into the pan and smooth evenly.
Bake for 20-25 minutes. You want the top of the brownies to be just set - don't over bake.
Cool brownies in the pan for 10 minutes.
Using the parchment paper, remove from pan and allow to cool on a cooling rack.
Cool and even put in the fridge for extra fudgy texture.
Topping
In a small mixing bowl, add the chocolate chips and coconut oil.
Using 30 second spurts, melt in the microwave. Stir between and repeat heating until completely melted.
Drizzle topping on top of your brownie.
Notes
Store the brownies in the fridge for up to 5 days in an airtight container.
Other Topping Ideas:
Sprinkle the top of the brownies with cocoa powder.
Whipped cream - sweetened with Stevia, monk fruit, or erythritol
Fresh berries
Make them extra decadent with a layer of sugar-free pudding on top.
You could do vanilla, chocolate, banana or even pistachio!
Make Sugar-Free Whipped Topping:
Add 1 cup of heavy cream into a chilled bowl with 4 packets of Stevia and a teaspoon of vanilla, mix or whip until you get the stiff peaks.
Serve right away to top of your delicious dessert or keep cool until serving.
