Spinach lasagna - who doesn't like it? Maybe I should say, Lasagna - who doesn't like it?
Even children who don't care for spinach like this lasagna recipe! But, with Popeye as a hero, what child doesn't like spinach?
As the mother of a large family, I am always looking for ways to stretch meals. Yep, it was my frugality that was the inspiration behind my easy spinach lasagna recipe!
That, and the fact that I could not eat meat for 30+ years because of meat allergies. Thankfully, my allergy to meat and other physical problems have resolved thanks to the GAPS diet! But, even though I can now eat meat, my easy spinach lasagna recipe is still a mainstay of meal planning.
Please keep in mind, with a large family I multiply recipes for large crowds! The basic ingredient quantities are given along with variations that I have used successfully and it is easily multiplied.
Tips For Making This Easy Spinach Lasagna Recipe
- I do not cook my lasagna noodles ahead of time - I layer them uncooked in the lasagna. This saves time, another messy pot to wash and the quality of the final dish is not affected!
- You can substitute ricotta for cottage cheese
- You can also substitute the pasta noodles for grilled eggplant or zucchini (makes a lighter version)
- Add any extra veggies to the filling you may have leftover

Easy Spinach Lasagna
Ingredients
Spinach Filling
- 1 lb Ricotta Cheese may substitute cottage cheese, I now use our homemade ricotta
- 10 oz pkgs frozen chopped spinach
- 1 teaspoons garlic powder
- 1 teaspoons salt
- 6 cups Tomato Sauce
- 1 lb Ground Beef
- 1 lb Lasagna Noodles
Instructions
Spinach Filling

Combine all ingredients in bowl and set aside.
Tomato Sauce
-
Brown meat and combine with tomato sauce. Set aside.

In a greased 13 x 9 pan, starting with a bit of tomato sauce in the bottom to prevent sticking, layer:
Lasagna noodles
Spinach filling
Tomato sauce
Mozzarella cheese -
Bake at 350F for 1 hour.

I like the idea of substituting eggplant for lasagna noodles. I'll definitely have this in my menu this week. I'm quite positive that eggplant will make it to my kid's list of veggies that I've made them eat unknowingly. At least they get to try it first and find out for themselves that veggies are actually good, rather that complain and whine about it!

I made this last weekend, and it's delicious. The best part was the kids eating spinach,though! I am growing Eggplant this year, but I don't think I'll wait that long to try the variation! I'm also looking forward to trying to make homemade Mozzarella, when I get my courage up!

Oh, this was/is delicious. Thank you, Dina-Marie. The photo and name got my attention since I haven't made an oven lasagna in years, and the garden has an abundance of big green Swiss chard leaves at present, which need harvesting.
Plus we were visiting picky-eater extraordinaire and he needs to eat more vegetables. It took a loong time mincing that armful of 'spinach' up in my little grinder, after having painstakingly washed and checked both sides of each leaf for critter dirt. I bought low-fat cottage cheese for the dairy part.
The lasagna was delicious. Unfortunately, "Picky" was having none of it. That's his loss. Others of us loved it. I'm going to try freezing some. Hope that'll be OK.
