I am getting ready to fly to Georgia where my sister is having surgery and will be gone for almost two weeks. So, I have been planning meals to freeze or ones that can be made with minimal preparation.
This is one meal that can easily be made ahead - just cook it, allow to cool and freeze. When you are ready to eat it, allow the Crustless Spinach Quiche to thaw, heat and enjoy. It doesn't get much easier and I know John and the children will have a nutritious meal while I am gone!

Crustless Spinach Quiche
Ingredients
- 2 pounds small curd cottage cheese
- 2, 10 oz pkg. chopped spinach (frozen works great!)
- 6 beaten eggs
- 6 tablespoon flour
- 12 oz grated cheddar cheese
- ¼ teaspoons nutmeg
- 1 teaspoons dill weed
- salt and pepper dash of each
Instructions

Prepare a 9x13 pan with nonstick spray.

Mix all ingredients in a large bow.

Pour into pan.

Bake at 350 F for 1 hour.

I have two questions:
1. do you beat the eggs first, then add to the bowl?
2. Can frozen (drained well) spinach be used? Or must it be fresh (washed and chopped)?

Christine, I hope you enjoy it as much as we do! I normally just crack my eggs in the bowl (usually on top of the spinach) and quickly beat them with a fork right there before mixing it all together. I use frozen spinach for this recipe and I have updated the recipe to show that - thanks for letting me know that this was a question - If you have it, chances are others do also!
