    I know that a quiche by definition has a crust. But, the crust, if it is homemade is the most time consuming part of a quiche! So if you are like me and are in need of a quick, easy yet nutritious meal...

    Say hello to Crustless Spinach Quiche! It is just the type of meal you have been looking for!

    Don't let the fact that Crustless Spinach Quiche contains spinach throw you off! I have had numerous self-professed spinach haters comment that they cannot believe this is spinach!

    Yes, I consider myself guilty of converting those spinach haters into spinach lovers! This spinach quiche recipe has made a believer out of them!

    This Spinach Quiche Recipe Is Great For Weeknights

    Whether you need a quick meal for your family, something to take to a pot-luck dinner or just a meal to share with someone, Crustless Spinach Quiche is sure to be a hit. This is a meal that is on my monthly menu plan and the whole family enjoys it.

    I am getting ready to fly to Georgia where my sister is having surgery and will be gone for almost two weeks. So, I have been planning meals to freeze or ones that can be made with minimal preparation.

    This is one meal that can easily be made ahead - just cook it, allow to cool and freeze. When you are ready to eat it, allow the Crustless Spinach Quiche to thaw, heat and enjoy. It doesn't get much easier and I know John and the children will have a nutritious meal while I am gone!

    Why Spinach Is Good For Us

    I am sure you remember Popeye the sailor man who loved spinach and when he ate it, his arms became swollen with muscles? Well, your arms may not swell with muscles but it turns out that Popeye was right - spinach is considered one of the healthiest foods you can eat.

    Not only is spinach low in fat and cholesterol, but take look at this list of nutrients that spinach is high in:

    • niacin
    • zinc
    • protein
    • fiber
    • vitamins A, C, E and K
    • thiamin
    • vitamin B6
    • folate (good for a healthy cardiovascular system)
    • calcium
    • iron
    • magnesium (helps lower blood pressure)
    • phosphorus
    • potassium
    • copper
    • manganese
    • antioxidants in the form of flavonoids

    What a list!

    So, all you Popeye fans, eat your spinach!

    Tips for Making Crustless Spinach Quiche:

    • This is good served hot or cold.
    • Crustless Spinach Quiche can be frozen and reheated.
    • Different spice combinations can also be used like garlic and basil.
    • This recipe doubles, triples and even quadruples well.

    Ingredients

      

    • 2 pounds small curd cottage cheese
    • 2, 10 oz pkg. chopped spinach (frozen works great!)
    • 6 beaten eggs
    • 6 tablespoon flour
    • 12 oz grated cheddar cheese
    • ¼ teaspoons nutmeg
    • 1 teaspoons dill weed
    • salt and pepper dash of each

    Instructions

     

    • Prepare a 9x13 pan with nonstick spray.
    • Mix all ingredients in a large bow.
    • Pour into pan.
    • Bake at 350 F for 1 hour.
    • Serve and Enjoy!

    Notes

    May be frozen and reheated. This recipe doubles, triples and quadruples well!

      1 I can't wait to try!
      I have two questions:
      1. do you beat the eggs first, then add to the bowl?
      2. Can frozen (drained well) spinach be used? Or must it be fresh (washed and chopped)?

        Christine, I hope you enjoy it as much as we do! I normally just crack my eggs in the bowl (usually on top of the spinach) and quickly beat them with a fork right there before mixing it all together. I use frozen spinach for this recipe and I have updated the recipe to show that - thanks for letting me know that this was a question - If you have it, chances are others do also!

      Never in my life have i tried quiche. I decided to try this recipe because, well i love food and food loves me! This was so awesome! I have a dinner party coming up soon and i will definitely take this dish. I know it will be a hit!
