Whether you need a quick meal for your family, something to take to a pot-luck dinner or just a meal to share with someone, Crustless Spinach Quiche is sure to be a hit. This is a meal that is on my monthly menu plan and the whole family enjoys it.
I am getting ready to fly to Georgia where my sister is having surgery and will be gone for almost two weeks. So, I have been planning meals to freeze or ones that can be made with minimal preparation.
This is one meal that can easily be made ahead – just cook it, allow to cool and freeze. When you are ready to eat it, allow the Crustless Spinach Quiche to thaw, heat and enjoy. It doesn’t get much easier and I know John and the children will have a nutritious meal while I am gone!

I am sure you remember Popeye the sailor man who loved spinach and when he ate it, his arms became swollen with muscles? Well, your arms may not swell with muscles but it turns out that Popeye was right – spinach is considered one of the healthiest foods you can eat.

Crustless Spinach Quiche Recipe Step by Step

- 2 pounds small curd cottage cheese
- 2, 10 oz pkg. chopped spinach (frozen works great!)
- 6 beaten eggs
- 6 Tbsp flour
- 12 oz grated cheddar cheese
- 1/4 tsp nutmeg
- 1 tsp dill weed
- salt and pepper dash of each
- Prepare a 9x13 pan with nonstick spray.
- Mix all ingredients in a large bow.
- Pour into pan.
- Bake at 350 F for 1 hour.
- Serve and Enjoy!
May be frozen and reheated. This recipe doubles, triples and quadruples well!
