Best Broccoli Soup Recipe
Ingredients
- 1 cups onion finely chopped
- 6 tablespoon butter
- 10 tablespoon flour
- 2 teaspoon salt
- ½ teaspoon pepper
- 3 cups chicken broth
- 2 cups milk
- 1 bunch broccoli cleaned and chopped or 1 package frozen broccoli, thawed
- 2 cups grated cheddar cheese
Instructions

Saute the onions in the butter.

When translucent, add the flour stirring quickly and constantly for the flour to absorb all the butter.

Quickly add the milk and stir well.

Add the chicken broth, broccoli and cheese - heat thoroughly.
Notes
You can use fresh or frozen broccoli.

Hi! Your soup sounds delicious. I have one that's very similar, but it uses whipping cream, so it becomes quite thick. I think your recipe would be less heavy. Quick question -- you add the broccoli in at the end along with the broth and cheese, and heat thoroughly. During this heating time, does the broccoli have a chance to soften? Thank you for this post and for your feedback. I'm looking forward to giving this a try.

Larryn, It does soften to a steamed consistency. If you would like it softer I would cook it first. Your addition of whipping cream sounds delicious!

Dina-Marie, thanks for getting back to me. The steamed consistency should be just fine. And I like the idea of not blending it -- it's wonderful to bite into softened chunks of broccoli! The whipping cream is good but heavy. I have another recipe for broccoli soup that has 2 cups of milk in it, but it also tends toward the really thick and heavy. Your recipe with just 1 cup of milk (and I think I'm going to try Lactose-Free or coconut milk) might work better. I'm also going to try using a veggie broth instead of the chicken broth to make it vegetarian. It works in my other recipes. Here's to good soup eating!
