This is absolutely the Best Broccoli Soup Recipe ever - and I mean ever! Not only is it delicious but it is also super easy AND it is a healthy broccoli soup! Definitely a comfort food.
I know, it is hot outside. So, why am I giving you my Best Broccoli Soup recipe now? Because I am seeing a lot of beautiful fresh broccoli and it is on sale!
Don't think that you can only use fresh broccoli though. This Best Broccoli Soup recipe works great and tastes delicious with frozen broccoli too!
I love versatile recipes - Especially those that are budget friendly!
So, if you come across a good sale on fresh broccoli, use it. Otherwise, if frozen is more economical - use it!
In the following recipe, the directions say to blend the soup after it is cooked. I love the consistency of blended soup but if you prefer a chunkier soup, don't blend it.
So, what makes this Best Broccoli Soup a Healthy Broccoli Soup?
Whether you are using fresh or frozen broccoli, you are getting another vegetable in your menu plan which gives a diversity of nutrition. That is always good.
But, the real secret that makes this a healthy broccoli soup is the use of chicken broth if you use "real" chicken broth. You can easily make you own chicken broth and there is even a video to show you how easy it is.

One thing I love about soups is the comfort of the meal. I mean, all you have to do is add some bread and maybe a salad and voila!

Hi Dina Maria! This looks like a winner of a recipe and I've got it saved to my pin board. I enjoy sharing good recipes across my social media when I find one that I really like. Have you considered adding share buttons to your posts? I would definitely use them! :)
Rust, thank you for mentioning the social share buttons. Another reader just let me know that they were missing! The back-end of the site was updated and somehow they magically disappeared! They are there now on the side and at the bottom. Thanks for your encouragement!

Hi! Your soup sounds delicious. I have one that's very similar, but it uses whipping cream, so it becomes quite thick. I think your recipe would be less heavy. Quick question -- you add the broccoli in at the end along with the broth and cheese, and heat thoroughly. During this heating time, does the broccoli have a chance to soften? Thank you for this post and for your feedback. I'm looking forward to giving this a try.
Larryn, It does soften to a steamed consistency. If you would like it softer I would cook it first. Your addition of whipping cream sounds delicious!

Dina-Marie, thanks for getting back to me. The steamed consistency should be just fine. And I like the idea of not blending it -- it's wonderful to bite into softened chunks of broccoli! The whipping cream is good but heavy. I have another recipe for broccoli soup that has 2 cups of milk in it, but it also tends toward the really thick and heavy. Your recipe with just 1 cup of milk (and I think I'm going to try Lactose-Free or coconut milk) might work better. I'm also going to try using a veggie broth instead of the chicken broth to make it vegetarian. It works in my other recipes. Here's to good soup eating!
Larryn, let me know how it works because it sounds good!
