    Crockpot White Chicken Enchilada Casserole

    Crockpot White Chicken Enchilada Casserole in one of the easy crockpot meals that does not need anything but some salsa, sour cream and maybe a salad if you are feeling especially generous.

    You might wonder what is the difference between an enchilada and a burrito. Traditionally, burritos use flour tortillas and enchiladas use corn tortillas.

    Also, burritos are normally picked up and eaten with your hands while enchiladas, because they are covered in sauce are eaten with a fork.

    I prefer the taste and texture of flour tortillas. Therefore, you will see in the following recipe, as well as, in my Easy Chicken Enchiladas Recipe, flour tortillas are used.

    Is it gluten-free?

    As written, the recipe is not gluten free but it can easily be made gluten-free with 2 substitutions:

    1. Instead of flour, use cornstarch
    2. Use corn tortillas instead of flour tortillas

    Step by step instructions

    On the stovetop, make the sauce with chicken stock, milk, spices and chilis - stir in the sour cream. Photo 1
    Place ingredients in layers as follows ending with the cheese and completely covering the bottom of the liner crock:

    Spoon ¼ of the sauce over the tortillas and follow with 1 ⅓ c. chicken. Photo 3
    Sprinkle with 1 c shredded cheese. Photo 4
    Cook on low for 6 hours or high 3 hours.

    Side dishes

    While this easy crockpot meal really doesn't require any additional side dishes, I do like to serve it with the following:

    • Simple Guacamole Recipe
    • jalepenos
    • Easy Homemade Salsa
    • sour cream

    Other suggestions:

    • Avocado slices
    • rice
    • corn chips

    Is Mexican food heart healthy?

    Quite a bit of Mexican food can have a lot of added sodium and unhealthy fats. It all depends on how it is prepared.

    For those using recipes that call for refried beans and use canned refried beans, there can be a lot of added sodium or salt. That along with other processed ingredients can make the recipe not considered to be healthy.

    In the following recipe, everything is homemade and healthy.

    Are they healthy for You?

    I would say that depends on how they are made!

    The following recipe is very healthy especially since it uses chicken broth and is filled with the good-for-you fats like butter and sour cream.

    To make Crockpot White Chicken Enchilada Casserole even healthier, use chicken bone broth (see How to Make Chicken Broth) instead of plain chicken broth to gain the added health benefits of bone broth.

    Can other meat be used?

    Ingredients

      

    • ⅓ cup butter
    • ⅓ cup  flour corn starch may be used
    • 3 cup chicken broth
    • ½ teaspoon cumin
    • ½ teaspoon cayenne pepper
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • 1 4 oz can green chilies
    • 1 cup sour cream
    • 4 cup cooked and shredded chicken
    • 20 flour tortillas corn tortillas may be used
    • 4 cup shredded cheese
    • 1 cup milk

    Instructions

     

    For Sauce:

    • In a large saucepan over medium heat, melt the butter.
    • Using a whisk, add the flour (or cornstarch) and continue to whisk.
    • Add the chicken stock, whisking constantly and allow to thicken.
    • Add milk, spices and chilies and cook until thickened - remove from heat.
    • Stir in the sour cream.

    In Crock Pot, layer as follows:

    • Line the bottom with a layer of tortillas to completely cover the liner crock.
    • Spoon ¼ of the sauce over the tortillas.
    • Layer about 1 ⅓ c chicken over tortillas
    • Sprinkle with 1 c shredded cheese.
    • Repeat layers ending with the cheese.
    • Cook on low for 6 hours or high 3 hours

      DELICIOUS! I made this for a dish to pass at work and my co-workers loved it too (I sent the recipe to them). Two notes: 1. Directions call for milk but there is no milk in the ingredients list; I searched the internet for another recipe and found several that listed 1/2 cup of milk, so I followed that and it work! 2. 4 hours is WAY too long to cook this in a crock pot, the tortillas were pretty much gone (mush and flavorless); I'll cut it back to 3 hours max, and probably part of that on low, next time. Overall, SUPER easy to make. Estimated prep time is pretty accurate! Thanks for the recipe.

      My husband is not a fan of chicken. I usually substitute (a) layer/s of ground beef, seasoned with garlic and onion, and a layer of white beans pureed and seasoned with salt, cumin and garlic.

      This is a very tasty dish. I make it to serve folks at a local cold weather shelter, and it is well received.
      No amount is listed for the milk that is to be added. I use 1/2 cup, and it turns out fine.
