    Complete Chicken Dinner in Crockpot is a one dish meal that is delish! I love easy crockpot meals that require nothing else added, unless of course you just have a hankering for some bread or a salad.

    Now that is what I'm talking about!

    You really can't get more easy than this - put it all in the crockpot, turn it on and go about your business until dinner time.

    Tip for Making Clean-up Easy

    One way to make crockpot cooking easier to clean up afterwards, is to spray the crock with a non-stick coating before placing your ingredients in it.

    Of course, you can use a liner and my daughter-in-law does it, but I just spray away!

    Complete Chicken Dinner in Crockpot Step by Step

    This recipe is so easy - just put all ingredients in the crockpot and go!

    Place chopped vegetables in the bottom of the crockpot. Arrange chicken on top of veggies.
    Mix the spices with chicken broth and pour over the chicken and vegetables.
    Cook and wait for dinner to be served!

    Serving Suggestions

    I love that this is a one dish meal and it really doesn't need anything added to it. But, here are some suggestions if you want to add to it:

    • Rice
    • Bread and Butter Pickles
    • Salad - Creamy Coleslaw Recipe or Feta Salad With Toasted Pecans and Raisins
    • Bread - Sourdough Bread or Carrot Muffins

    Can Other Veggies Be Used in Complete Chicken Dinner in Crockpot?

    You can easily substitute other veggies for the carrots and potatoes in the following recipe.

    Other veggies to try:

    • sweet potatoes
    • cabbage
    • cauliflower
    • broccoli - be sure to cut large spears so it does not get mushy

    Don't Throw Away the Broth!

    The broth from Complete Chicken Dinner in Crockpot is absolutely delicious! Here are some ideas to make the most of it:

    • Use it over rice - I even cook my rice in it the next day using the broth instead of water to cook it in.
    • Spoon it over biscuits or bread.
    • Use as a gravy for mashed potatoes.
    • Make a soup and use the leftover broth as the base in place of chicken broth.

    Should Food Be Covered With Liquid in a Crockpot?

    This is a common question! It is not necessary for the food in a crockpot to be covered with liquid.

    In Complete Chicken Dinner in Crockpot, the chicken broth does not cover everything and the chicken is deliciously tender.

    What Crockpot Do You Use?

    I have this 6 qt Crockpot and this 6 qt Programmable Crockpot. Both work very well.

    If you will be leaving the crockpot for long periods of time, a programmable one is a good investment because it can be set for the length of time and either "Low" or "High" heat.

    One of the biggest benefits of the programmable crockpot is that it will click to "Warm" and keep the food hot and at a safe temp until you get home.

    Make Complete Chicken Dinner in Crockpot Even More Budget Friendly

    While this recipe is definitely easy on the budget, you can make it even more so by taking advantage of sales on chicken and freezing it.

    I stock up on breasts, thighs and drumsticks when it is on sale so I always have it on hand. This also makes entertaining easier because you have the makings of a delicious, quick and easy meal on hand.

    Ingredients

      

    • 3 lbs chicken breasts, thighs or drumsticks
    • 8 potatoes cut into large chunks
    • 8 carrots cut into large chunks
    • 2 onions chopped
    • 1 cup chicken broth
    • 2 teaspoons salt
    • 1 teaspoons pepper
    • 2 teaspoons sage
    • 2 teaspoons basil

    Instructions

     

    • Place chopped vegetables in the bottom of the crock pot.
    • Arrange the chicken on top of veggies.
    • Mix the spices with chicken broth and pour over the chicken and vegetables.
    • Cook on low for 6 hours or high 3 hours.

    Notes

    Don't worry if you forget to mix the spices with the chicken broth - just give it a quick stir around the chicken and veggies.
