    Easy Chicken Alfredo Recipe

    This Easy Chicken Alfredo Recipe is just that - easy! No one will ever know that you did not slave for hours but shhhh! It will be our secret!

    Do you ever look at recipes that say "Easy" and wonder how they can say it? Well, when I say Easy Chicken Alfredo, I mean it! Plus, it is not only easy and delicious, it is economical!

    I thought about calling it Easy Chicken Alfredo Fettuccine because, after all, isn't that just fun to say? But you can really use any pasta noodles you want to - fettuccine, spaghetti...

    I used to buy Alfredo sauce so, naturally, for a family our size, we did not have it often! Read: too expensive!

    Then, a friend gave me a recipe for homemade Alfredo sauce and with some tweaking, this Easy Chicken Alfredo Recipe was born.

    Some Tips For Making This Easy Chicken Alfredo Recipe

    You can also make Spinach Alfredo with the option given in the recipe. Before the GAPS diet, I was a vegetarian because of stomach issues and that is all I cooked - no Easy Chicken Alfredo for us! The GAPS diet truly was life changing for us.

    This recipe works great with frozen chicken breast so, be sure to stock up when you find it on sale and stick it in your freezer.

    Also, did you know that cream cheese that is going to be cooked can also be frozen? Granted, it doesn't go on sale very often but if you can buy it in bulk (think Sam's or Costco) you can freeze it.

    Since the texture does change, however, I don't recommend freezing cream cheese if you are going to use it for a cheesecake - like my favorite Sour Cream Cheesecake. But for recipes in which it is cooked, frozen cream cheese thawed works great!

    So, if you have let the budget keep you from having Easy Chicken Alfredo or Spinach Alfredo because those bottles of sauce are too expensive, get ready.

    Like the name says, this Chicken Alfredo is not only easy but is also delicious.

    Ingredients

      

    • 4 chicken breast
    • 16 oz. pasta
    • 6 tablespoon butter
    • 1 ½ cups whipping cream
    • 1 cups Parmesan cheese
    • 8 oz. cream cheese
    • salt pepper, nutmeg, parsley - to taste

    Instructions

     

    • Cut chicken into bite size pieces and saute in a small amount of oil. Set aside.
    • Brown the butter in a boiler.
    • Add whipping cream and all other ingredients.
    • Stir until the cream cheese melts.
    • Add sauteed chicken.
    • May thin with milk if necessary.
    • Serve over pasta.

    Notes

    For Spinach Alfredo Sauce: Add 1 package of frozen spinach (thawed) after the cream cheese has melted and allow to heat thoroughly.
