This Honey Sweetened Instant Pot Strawberry Jam Recipe is different from any other other strawberry jam recipe, first of all, because it is made in the Instant Pot. That means that before you know it, your strawberry jam is done and ready to eat! Secondly, it is delicious with honey or sugar making it a real food treat!
I don't know about you, but I cannot seem to grow strawberries here in west Texas. Maybe it is our heat but I really think it is the high winds we have. Anywho, for whatever reason, I can't grow them - period.
However, I can sure buy them and especially when they are on sale. My family loves them and they loooovvve strawberry jam!
I rarely buy it though because of all the sugar and unnecessary ingredients. While this Honey Sweetened Instant Pot Strawberry Jam recipe can be sweetened with sugar, it won't have as much.
In fact, is not nearly as much as the store bought version and there are NO unnecessary ingredients.
Don't want to use sugar? No problem because this is just as tasty when sweetened with honey!
What is an Instant Pot?
If you are not familiar with the Instant Pot, I'm telling you, you are in for a treat! It is a slow cooker, pressure cooker, yogurt maker, rice cooker and more in one handy dandy kitchen appliance.
I have the 8 qt but there is also a 6 qt and a 3 qt available. The benefit of buying the 8 qt, even with a small family, is that you can cook as little as 1 cup of rice perfectly in it! Plus, you have the larger capacity if you need it.
I can't say enough about it - it has really taken the place of my crock pot and does so much more! Here are a few of my faves:

Tips for Making Instant Pot Strawberry Jam
- Fresh or frozen (thawed) strawberries work well.
- Buy fresh strawberries on sale and stock up.
- For a slightly tarter jam, use 1 cup honey - for sweeter jam, use 2 cups honey.
- This recipe easily doubles - I have an 8 qt Instant Pot and it works great.
- While any honey can be used, a lighter tasting honey like clover will not overpower the taste of the strawberries.
- This jam may be kept in the refrigerator but for longer storage, place hot jam in a sterilized jar and then in a water bath for 5 mins.
What Type of Honey Should I Use?
Lighter honey has a more subtle taste. I have found a lighter honey works better because the taste is not so strong. After all, you want to know you are eating strawberry jam no just a honey sweetened treat.
Is this Instant Pot Strawberry Jam Recipe GAPS Diet, Paleo or Keto Friendly?
Because this recipe is thickened with cornstarch, it is not GAPS, Paleo or Keto legal. Cornstarch is a starch that requires more to digest and break down and is not allowed on any of these diets.

Besides the cornstarch, honey is also not allowed on keto because it contains so many carbs.

Instant Pot Strawberry Jam Recipe
Ingredients
- 2 lbs strawberries cleaned hulled, and quartered
- 1 - 2 cups honey sugar may be used
- 2 tablespoons fresh lemon juice
- 3 tablespoons cornstarch
- 3 tablespoons water
Instructions

Clean and prepare strawberries and put into a large bowl. Add the honey and lemon juice and let set for 10-30 minutes. The longer you let them set the better they will be.

After they have set and juices have formed, add to the Instant Pot. Cook on high pressure for 1 minute. It takes about 10 mins for the Instant Pot to heat up and build pressure.

Allow a natural release until the pin drops and you can open the lid - about 20 mins.

Combine cornstarch and water and stir well to mix.

Remove the lid and stir as you slowly pour the cornstarch/water mixture into the strawberries..

Turn the Instant Pot on “Sauté” and bring to a boil for about 3 minutes. Allow the mixture to thicken.

Turn off Instant Pot and pour jam into a container. Keep refrigerated in an airtight container or jar.
