There are several natural sweeteners that are good for diabetics or anyone looking for a sweetener that does not raise the blood sugar levels.

What Are Some Good Diabetic Dessert?
Well, these diabetic brownies are definitely a good choice, but you could also satisfy a sweet tooth a few other ways.
Most recipes can be converted to a good diabetic dessert by substituting appropriate ingredients such as coconut flour or almond flour and a natural sweetener like stevia, monk fruit and erythritol.
Other ready-made options, depending on your diet preference could be:
- Sugar-free hot chocolate with sugar-free whipped cream
- Sugar-free Jello or Pudding
- fresh seasonal fruit in yogurt
- appropriately sweetened ice cream sandwiches
Tips for Making Diabetic Brownies
Cooking with Coconut Flour
The following diabetic brownie recipe uses coconut flour. When cooking with coconut flour it is important to note that it absorbs much more liquid than all purpose flour.
So, be sure to add the eggs called for as they provide some liquid.
Using Monk Fruit Sweetener
Monk fruit sweeteners are 150-200 times sweeter than sugar and contribute sweetness to foods and beverages without adding calories.
Feel free to start with less and add more to taste.
Can Diabetics Eat Chocolate?
Yes, diabetics can eat chocolate. Everything in moderation - right?
Of course, some chocolates are better than others. So...
For Example, Sugar-free and and Dark Chocolate are going to be much better for a diabetic than semi-sweet or milk chocolate.
This is why we use sugar-free chocolate for this recipe.
Making These Diabetic Brownies
Making the healthy brownie recipes isn’t as hard as you think and this one is pretty simple to put together!
Mixing the dry ingredients in one bowl and the wet in another bowl, the two are then mixed together and chocolate chips and nut (which are optional but delicious) are stirred in.
Pour the batter into a pan and bake. Making the delicious topping is also super quick and easy and voila - you have delicious brownies!
Other Topping Ideas for Diabetic Brownies
- Sprinkle the top of the brownies with cocoa powder.
- Whipped cream - sweetened with Stevia, monk fruit, or erythritol
- Fresh berries
- Make them extra decadent with a layer of sugar-free pudding on top. You could do vanilla, chocolate, banana or even pistachio!
Make Sugar-Free Whipped Topping:
- Add 1 cup of heavy cream into a chilled bowl with 4 packets of Stevia and a teaspoon of vanilla, mix or whip until you get the stiff peaks you are looking for. Serve right away to top of your delicious dessert or keep cool until serving.
How to Store Diabetic Brownies
You can store these brownies in an airtight container for up to five days.
Stored in the fridge for an extra fudgy texture.
They will keep in the freezer for 3 - 6 months. Frozen for longer periods will tend to dry them out.

Diabetic Brownies
Ingredients
For the Brownies
- 4 eggs
- ⅓ cups butter melted
- 1 teaspoon vanilla
- ⅓ cups coconut flour
- ¼ cups almond flour
- ⅓ cups unsweetened cocoa powder
- ½ tsp. baking soda
- ½ cups monk fruit sweetener erythritol may also be used
- ¼ cups sugar free chocolate chips
- ¼ cups chopped nuts - pecans or walnuts - optional but delicious!
For the Topping
- ⅔ cups sugar free chocolate chips
- 2 teaspoon coconut oil
Instructions

Preheat oven to 350 F.

Line a 8 x 8 pan with parchment paper.

In a small bowl or measuring cup whisk together the eggs and melted butter.

Using another bowl, combine coconut flour, almond flour, unsweetened cocoa powder, sweetener and baking soda.

Add the wet ingredients into the dry ingredients and mix well.

Stir in the chocolate chips and chopped nuts (if using).

Pour the batter into the pan and smooth evenly.

Bake for 20-25 minutes. You want the top of the brownies to be just set - don't over bake.

Cool brownies in the pan for 10 minutes.

Using the parchment paper, remove from pan and allow to cool on a cooling rack.

Cool and even put in the fridge for extra fudgy texture.
Topping

In a small mixing bowl, add the chocolate chips and coconut oil.

Using 30 second spurts, melt in the microwave. Stir between and repeat heating until completely melted.

Drizzle topping on top of your brownie.

Is there a different flour then the nut based ones I’m allergic to both coconut and almond all tree nuts makes finding food so hard
