I don't know about you, but we rarely eat pork. Beats me as to why, after all, it is so good. I love bacon and pork loin and definitely buy them when they are on sale.
That is how this recipe came into existence - pork was on sale. And, like most other grocery items, when I find them on sale, I stock up! Remember freezing avocados?
📋 Ingredients
- 4 center cut pork chops
- ½ onion diced
- 2 – 3 carrots sliced ¼” thick
- 1.5 lb potatoes cut into large bite size chunks
- 2 – 3 stalks celery sliced
- 8 oz mushrooms sliced
- 2 tsp garlic
- 1 tsp thyme dried
- 1 pckt gravy mix see notes for substitutions
- 1 ½ c chicken broth
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
🍖 Meats
The following recipe used pork chops but really any pork can be used.
Pork Stew Meat to try includes:
- Chops - Which is the cut I used because they were on sale!
- Boston Butt - also known as pork shoulder
- Pork loin - a thicker cut from which steaks can be cut - see Easy Pork Loin Recipe
- Pork tenderloin - this is not cut from the same part of the body as the pork loin - it is thinner and smaller
🥔 Potatoes
We use big golden yukon potatoes as these have the best texture and flavor that compliments the stew, but you can also use:
- mini potatoes
- russet potatoes
- red potatoes
We've never tried this with sweet potatoes, and probably wouldn't recommend it.
This Pork Stew is super easy and with the addition of carrots, potatoes, onions and mushrooms is a one dish meal - I love that! But, I rarely stop there - it is just too easy to add a salad and homemade bread!
🧂 Seasoning
Instead of gravy, you can also make your own seasoning mix:
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- dash white pepper
- salt/pepper - to taste
- 2 teaspoon Herbes de Province
🍲 What is an Instant Pot?
Not familiar with an Instant Pot? An Instant Pot is a multi-functional kitchen appliance that can be used as a pressure cooker, crock pot, yogurt maker, rice cooker and much more. I use mine several times a week.
I have the 8 qt Instant Pot and although you may not feel you need the larger size, it does come in handy.
Just think, you can make a big batch of pork stew and freeze the extras. Plus, I can cook as little as 1 cup of rice in mine! Personally, I think every kitchen needs at least one!
🔪 Instructions
- Chop all vegetables Photo 1
- Pour the oil into Instant Pot and press saute. Add seasoned pork and stir to sear. Photo 2
- When seared, add the vegetables Photo 3
- Saute for a few minutes until brightly colored and beginning to soften. Photo 4
- Add gravy mix over the top, chicken broth and remaining ingredients.
- Place the lid on your Instant Pot and turn switch to seal.
- Press “manual” button and set it for 20 - 25 minutes.
- When cooking time is up, do a quick release until the pin drops and all pressure is released from inside the pot. Not shown

💭 Top tips
- Buy pork chops (or other cuts) on sale and freeze them to make this even more economical - almost any will work
- Other spices to season pork with include:
- rosemary
- thyme
- sage
- cumin
- paprika
- onion powder
- garlic powder
- or just use your favorite
- Homemade chicken broth makes this even more delicious and healthy.
🥗 Side dishes
Sourdough bread bowls are delicious and there are fewer dishes to wash after the meal because you eat your bowl! This is a huge time saver because it means you just need to wash the instant pot.
Other than that, a healthy side salad is a nice balance to the heavy and nutritious stew. This recipe already has a ton of vegetables, so some leafy greens with your favorite dressing is all you need.

Instant Pot Pork Stew
Ingredients
- 4 center cut pork chops can use pork steaks as well, but remove bone, cut into bite size pieces and seasoned with salt, pepper, and garlic powder to your liking
- ½ onion diced
- 2 – 3 carrots sliced ¼” thick
- 1.5 lb potatoes cut into large bite size chunks, unpeeled for more nutrition, but optional
- 2 – 3 stalks celery sliced
- 8 oz mushrooms sliced
- 2 teaspoon garlic
- 1 teaspoon thyme dried
- 1 pckt gravy mix see notes for substitutions
- 1 ½ cups chicken broth
- 2 tablespoon oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions

Add oil to Instant Pot and press "Saute".

Drop in the seasoned pork and allow to cook until you have a good sear on all sides. Stir continuously.

After searing the meat, put in the chopped carrots, celery and onion. Saute for a few minutes until brightly colored and they are beginning to soften.

Add the potatoes, mushrooms, spices and shake in the gravy mix over the top.

Pour in the chicken stock

Place on the Instant Pot lid, and put the toggle switch into the “sealing” position

Press “manual” button and set it for 20 - 25 minutes.

When cooking time is up, do a quick release until the pin drops and all the pressure is released from inside the pot.

Remove the lid and give it a good stir.

Notes
Want it thicker?
If you find the liquid is not thick enough for your liking, simply press the saute button and add a slurry of 1 tablespoon cornstarch and 2 tablespoon water. Mix and pour into the stew - stir to thicken.
Paleo & Keto Option
Leave out potatoes for paleo and keto diets. Other vegetables to add in place of the potatoes are:
- winter squash
- cauliflower
- celeriac
Seasoning suggestions to use in place of the gravy packet - use 1, combo or all:
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- dash white pepper
- salt/pepper - to taste
- 2 teaspoon Herbes de Province
