    Instant Pot Pork Stew

    I don't know about you, but we rarely eat pork. Beats me as to why, after all, it is so good. I love bacon and pork loin and definitely buy them when they are on sale.

    That is how this recipe came into existence - pork was on sale. And, like most other grocery items, when I find them on sale, I stock up! Remember freezing avocados?

    📋 Ingredients

    • 4 center cut pork chops
    • ½ onion diced
    • 2 – 3 carrots sliced ¼” thick
    • 1.5 lb potatoes cut into large bite size chunks
    • 2 – 3 stalks celery sliced
    • 8 oz mushrooms sliced
    • 2 tsp garlic
    • 1 tsp thyme dried
    • 1 pckt gravy mix see notes for substitutions
    • 1 ½  c chicken broth
    • 2 tbsp oil
    • 1 tsp salt
    • 1 tsp pepper

    🍖 Meats

    The following recipe used pork chops but really any pork can be used.

    Pork Stew Meat to try includes:

    • Chops - Which is the cut I used because they were on sale!
    • Boston Butt - also known as pork shoulder
    • Pork loin - a thicker cut from which steaks can be cut - see Easy Pork Loin Recipe
    • Pork tenderloin - this is not cut from the same part of the body as the pork loin - it is thinner and smaller

    🥔 Potatoes

    We use big golden yukon potatoes as these have the best texture and flavor that compliments the stew, but you can also use:

    • mini potatoes
    • russet potatoes
    • red potatoes

    We've never tried this with sweet potatoes, and probably wouldn't recommend it.

    This Pork Stew is super easy and with the addition of carrots, potatoes, onions and mushrooms is a one dish meal - I love that! But, I rarely stop there - it is just too easy to add a salad and homemade bread!

    🧂 Seasoning

    Instead of gravy, you can also make your own seasoning mix:

    • ½ teaspoon garlic powder
    • 1 teaspoon onion powder
    • dash white pepper
    • salt/pepper - to taste
    • 2 teaspoon Herbes de Province

    🍲 What is an Instant Pot?

    Not familiar with an Instant Pot? An Instant Pot is a multi-functional kitchen appliance that can be used as a pressure cooker, crock pot, yogurt maker, rice cooker and much more. I use mine several times a week.

    I have the 8 qt Instant Pot and although you may not feel you need the larger size, it does come in handy.

    Just think, you can make a big batch of pork stew and freeze the extras. Plus, I can cook as little as 1 cup of rice in mine! Personally, I think every kitchen needs at least one!

    🔪 Instructions

    • Chop all vegetables Photo 1
    • Pour the oil into Instant Pot and press saute. Add seasoned pork and stir to sear. Photo 2
    • When seared, add the vegetables Photo 3
    • Saute for a few minutes until brightly colored and beginning to soften. Photo 4
    • Add gravy mix over the top, chicken broth and remaining ingredients. 
      • Place the lid on your Instant Pot and turn switch to seal.
      • Press “manual” button and set it for 20 - 25 minutes.
      • When cooking time is up, do a quick release until the pin drops and all pressure is released from inside the pot. Not shown
    • Remove the lid stir and enjoy. Photo 5

    Chop your vegetables, cube your pork and sear it, add your vegetables and sautee them all together!

    💭 Top tips

    1. Buy pork chops (or other cuts) on sale and freeze them to make this even more economical - almost any will work
    2. Other spices to season pork with include:
      • rosemary
      • thyme
      • sage
      • cumin
      • paprika
      • onion powder
      • garlic powder
      • or just use your favorite
    3. Homemade chicken broth makes this even more delicious and healthy.

    🥗 Side dishes

    Sourdough bread bowls are delicious and there are fewer dishes to wash after the meal because you eat your bowl! This is a huge time saver because it means you just need to wash the instant pot.

    Other than that, a healthy side salad is a nice balance to the heavy and nutritious stew. This recipe already has a ton of vegetables, so some leafy greens with your favorite dressing is all you need.

    Ingredients

      

    • 4 center cut pork chops can use pork steaks as well, but remove bone, cut into bite size pieces and seasoned with salt, pepper, and garlic powder to your liking
    • ½   onion diced
    • 2 – 3 carrots sliced ¼” thick
    • 1.5 lb potatoes cut into large bite size chunks, unpeeled for more nutrition, but optional
    • 2 – 3 stalks celery sliced
    • 8 oz mushrooms sliced
    • 2 teaspoon garlic
    • 1 teaspoon thyme dried
    • 1 pckt gravy mix see notes for substitutions
    • 1 ½  c chicken broth
    • 2 tablespoon oil
    • 1 teaspoon salt
    • 1 teaspoon pepper

    Instructions

     

    • Add oil to Instant Pot and press "Saute".
    • Drop in the seasoned pork and allow to cook until you have a good sear on all sides. Stir continuously.
    • After searing the meat, put in the chopped carrots, celery and onion.  Saute for a few minutes until brightly colored and they are beginning to soften.
    • Add the potatoes, mushrooms, spices and shake in the gravy mix over the top.
    • Pour in the chicken stock
    • Place on the Instant Pot lid, and put the toggle switch into the “sealing” position
    • Press “manual” button and set it for 20 - 25 minutes.
    • When cooking time is up, do a quick release until the pin drops and all the pressure is released from inside the pot.
    • Remove the lid and give it a good stir.
    • Enjoy!

    Notes

    Want it thicker?

    If you find the liquid is not thick enough for your liking, simply press the saute button and add a slurry of 1 tablespoon cornstarch and 2 tablespoon water. Mix and pour into the stew - stir to thicken.

    Paleo & Keto Option

    Leave out potatoes for paleo and keto diets. Other vegetables to add in place of the potatoes are:

    • winter squash
    • cauliflower
    • celeriac

    Seasoning suggestions to use in place of the gravy packet - use 1, combo or all:

    • ½ teaspoon garlic powder
    • 1 teaspoon onion powder
    • dash white pepper
    • salt/pepper - to taste
    • 2 teaspoon Herbes de Province

        Una, I updated the post with information. An Instant Pot is a multi-function kitchen appliance that can be used as a pressure cooker, crock pot, yogurt maker, rice cooker and more. I love mine and use it multiple times a week. I have the 8 qt Instant Pot and even though you may not need a larger one, you can make larger batches and freeze the extras. Also, I can cook as little as 1 cup of rice in mine. I hope this helps!

      Hi, thank you for sharing. I doubled this recipe, added assorted bell peppers to all the veggies you have listed, used Turkey Stock, added additional herbs & cooked this using my 30 minute STEW setting in my Power Pressure Cooker. My family loved it! Perfect on this blustery cold night!!! So glad we enough for lunch tomorrow :)

      I had a most of a gammon joint left over and used that. The stew was lovely and yes I also used a pressure cooker for 25 mins. I used beef stock instead and some cider for taste, that was nice Dina-Marie.

      The recipe doesn't state when to use the thyme. Also, what type of gravy mix is used? There are many different kinds....

        Tesa, thank you for bringing this to my attention. I have updated and clarified that the spices are added when adding the mushrooms and chicken broth. I just use the store brand gravy mix and think any would work well. I hope this helps!

      Where do you get the 1 hour 32 minutes from? You have prep time of 12 minutes and 20-25 minutes of IP time. Am I missing something?

        Hi James! That is a bit misleading but that is automatically added the way I have my recipes displayed. It is pulling the 20 min cool down time for the instant pot and lumping it into the cooking time. Sorry for the confusion but I try to be as specific as possible and if someone is new to instant pot cooking, they may not realize that there is that time to account for.

      I just tried the recipe and use pork loins, cut into 1 inch cubes, seasoned with salt pepper garlic and onion left at room temp for about 30 minutes. Then cooked for 21 minutes. The pork came out rough and dry! Is there a better way to make it tender and soft? Or is it just the cut of the meat that makes it feel like that?

        Hey Maxine! When you say "cooked", do you mean in an instant pot with the lid on and set to seal? This is necessary to keep the moisture locked in while cooking.

        The vegetables also contribute moisture to the stew, you can't just leave them out - and of course the 1.5cups of broth. It shouldn't be possibly for this to be dry with all these.
