    English Muffin French Toast with Yogurt Sauce

    English Muffin French Toast with Yogurt Sauce is easy and a total show stopper. Use either sourdough English Muffins or your favorite. Yogurt Sauce is a delicious pancake topping too!

    English Muffin French Toast

    If you have ever made English Muffins, you know how easy they are to make. And Sourdough English Muffins are just as easy!

    Like most foods, once you taste the homemade version, it is hard to go back to store bought - especially when you eat them fresh and hot!

    While I use the Sourdough English Muffins for the following recipe, any will do. Or, use your favorite store-bought variety.

    In my humble opinion, nothing tastes better than a soft poached egg on a Sourdough English Muffin. But, that was until I made the following yogurt sauce.

    Yogurt Sauce for Pancake Topping

    Don't get stuck in a rut - life is too short to be bored.

    So, a suggested use for the yogurt sauce if you don't want to use it on English Muffin French Toast is to use it as a pancake topping. It is delicious!

    Our weekday breakfast consists of Sourdough pancakes but we do have variety - on Friday, raisins are added to the batter and on Saturday, chocolate chips are added.

    On Sunday we have eggs for breakfast. Scrambled eggs were the norm until I began making the Sourdough English Muffins.

    Because English Muffin French Toast is so easy to make, I have been trying to find other uses for them, hence, the following recipe.

    My family loves this dish- I quadrupled the recipe which was a perfect amount for the 89 of us.

    But, be sure to make extra yogurt sauce and have plenty of fresh strawberries on hand! Isn't the summertime wonderful with all the fresh berries in season?

    Yogurt Sauce - Is Yogurt Easy to Cook With?

    If you have never cooked a yogurt sauce, you may be wondering if it's easy to cook with or not. Yogurt is super easy to cook with, believe it or not.

    I actually think that yogurt is an undervalued ingredient in a lot of dishes. You can use yogurt to cook a variety of things. 

    You can make sauce, dips, salad dressings, and even marinades with yogurt. Use it as a substitute for sour cream and even butter in some recipes.

    Is Frozen Fruit Easy to Cook With?

    If you don't have fresh fruit, the next best thing is frozen fruit. I use a lot of different fruits in my recipes, so I thought I would address this.

    Is frozen fruit easy to cook with? It is! You can either unthaw it before you use it or you can throw it in the recipe frozen. 

    Frozen fruit doesn't take long to thaw. I like frozen blueberries and strawberries for that very reason. You don't have to worry about them going bad either. 

    You can take what you need out of the freezer and get to cooking. 

    Tips For Making English Muffin French Toast:

    • While I used strawberries, any fruit would be delicious and if fresh fruit is not available, frozen would also work.
    • Try adding chocolate chips to the mix or sprinkle with the berries
    • Try skipping the sauce and add some bananas, cinnamon sugar and maple syrup

    English Muffin French Toast with Yogurt Sauce

    No matter what English Muffin you choose, English Muffin French Toast takes it up a level. The Yogurt Sauce is easy to make and is a great pancake topping too!

    Ingredients

      

    • 4 eggs
    • 1 cups heavy cream
    • 1 teaspoon vanilla
    • 6 English muffins
    • ¼ cups butter
    • 1 cups Greek yogurt
    • 3 tablespoon maple syrup
    • Butter, fresh strawberries, or other berries.

    Instructions

     

    • Whisk eggs, cream, and vanilla together.
    • Place the English muffins, cut side up in a 13 x 9 baking dish.
    • Pour the egg mixture over the muffins and allow to sit for about 5 minutes - I wait until my cast iron skillet is hot. The muffins are slightly soggy but you are still able to pick them up easily.
    • Melt butter in a skillet over medium - high heat.
    • Remove the English muffins from the batter and place in hot skillet.
    • Cook the English muffins until brown and repeat on other side.
    • Stir together the Greek yogurt and syrup.
    • Top the English muffins with the Yogurt and syrup mixture and strawberries.
    • Enjoy!
