    Healthy Pumpkin Muffins Recipe

    This Healthy Pumpkin Muffins Recipe is simple to make and delicious to eat! Make homemade pumpkin muffins or pumpkin bread using the same recipe - a real food recipe with healthy options.

    Fresh or Canned Pumpkin for Healthy Pumpkin Muffins Recipe

    I love using fresh pumpkin for any of my pumpkin recipes because the flavor is just taken up a notch! But, don't worry, you will have delicious muffins using canned pumpkin too!

    I get plenty of fresh pumpkin from a local farmer. At the end of the season, he just wants to get rid of them!

    Fun fact: Cows loooovve pumpkin! And, I normally have enough to give them gobs! Pumpkin is their Fall treat!

    After I cook my pumpkins, I freeze them for use all winter long! Having frozen pumpkin is invaluable when it comes to last-minute desserts.

    Healthy Pumpkin Muffins Recipe Makes Muffins or Pumpkin Bread

    I use the same recipe whether I am making homemade pumpkin muffins or homemade pumpkin bread.  Sometimes I feel the ease of a loaf, ready to slice as dinner is served.

    Other times, I favor giving each family member their own little muffin. Either way, slathered with butter, pumpkin bread or pumpkin muffins are always in season!

    What is the Difference Between Baking Muffins and Bread?

    The only difference (besides the shape) is cooking time. Bread takes longer to cook than muffins. Cook homemade pumpkin bread for 1 hour or until a fork comes out clean.

    To make Healthy Pumpkin Bread: Grease a loaf pan, follow the recipe below, pour batter into loaf pan and bake for 1 hour.

    Be sure to check for doneness with a toothpick, fork or knife. Insert either into the center of the loaf, it will come out clean if the loaf of pumpkin bread is done.

    Use as a Meal Addition or a Snack

    In the winter, we eat a lot of soups and what goes better with soup than bread or muffins? Pumpkin bread is an easy answer to last-minute meal additions. And, the aroma created from their baking is mouthwatering!

    Homemade pumpkin muffins also make a great grab-and-go snack - my whole family loves them!

    The cinnamon and cloves baking in the pumpkin muffins or pumpkin bread is better than any potpourri! It whets even the toughest of appetites not to mention, conjuring up feelings of homeyness.

    Suggested Optional Ingredients:

    • Raisins
    • Nuts - almonds, walnuts, pecans...
    • Chocolate chips - Dark chocolate is especially good.
    • Coconut
    • Oats

    How To Make This Healthy Pumpkin Muffins Recipe Step by Step

    • In mixing bowl, mix flour, baking powder, baking soda, salt, cinnamon and cloves - set aside. (Not shown)
    • Beat sugar, butter (Make your own!) and eggs until fluffy - I use my hand mixer for ease. Photos 1 - 2
    • Add pumpkin and mix well. Photos 3 - 4
    • Add dry ingredients alternately with the milk and vanilla. Photo 5
    • If desired, add nuts and/or raisins. (Not shown)
    • Fill muffin cups ½ - ⅔ full - I use a ¼ cup measuring cup. Photo 6
    • Bake about 25 min. or until a fork comes out clean.

    Ingredients

      

    • 1 ¾ cups sprouted whole wheat flour
    • ¼ teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ½ teaspoon cinnamon
    • ¼ teaspoon ground cloves
    • 1 ⅓ cups sucanat, honey or raw sugar
    • ⅓ cups butter
    • 2 large eggs
    • 1 cups cooked/canned pumpkin
    • ⅓ cups milk preferably raw
    • ½ teaspoon vanilla
    • ½ cups nuts opt.
    • ½ cups raisins opt.

    Instructions

     

    • Preheat oven to 350F
    • In mixing bowl, mix flour, baking powder, baking soda, salt, cinnamon and cloves - set aside.
    • Beat sugar, butter and eggs until fluffy.
    • Add pumpkin and mix well.
    • Add dry ingredients alternately with the milk and vanilla.
    • If desired, add nuts and/or raisins.

    For Pumpkin Muffins:

    • Pour batter into greased or lined muffin cups.
    • Bake 20 - 30 minutes or until fork comes out clean.

    For Pumpkin Bread:

    • Pour batter into greased loaf pans
    • Bake about 1 hr. or until fork comes out clean,

    Notes

    To Make a Loaf:

    Pour batter into greased loaf pans and bake about 1 hr or until fork comes out clean.
